With Spring here (finally) thought I would share a few salad recipes with you to get back to being healthy without it being painful. Bathing suit season is just around the corner and every little bit counts.
Light, Crisp Salad
Hearts of Romaine lettuce
Salt & Pepper to taste
Either 6 drops of lemon juice or a slice of lemon squeezed
Olive oil to taste
Add favorite vegetables

Italian Style Salad
Italian style lettuce
Cherry tomatoes cut in halves
Semi-crushed walnuts
Croutons
Pepper to taste
Olive oil and Balsamic Vinaigrette to taste

Summer Salad
Spinach leaves
Sliced Strawberries
Feta Cheese
Semi-crushed Pralines (or sugared walnuts)
Raspberry Vinaigrette
Put each ingredient in separate bowl and allow guests to mix together.
Lunds Byerly’s has the best Raspberry Vinaigrette ($5+) but 2 tablespoons = 45 calories and you won’t use 2 tablespoons, maybe one.

Mandarin Orange slices
Sliced Almonds
Warmed Sesame Dressing from Macy’s

Or for the simple folks:
Caprese Salad
1 toothpick
1 Cherry Tomato
1 Basil leaf
1 Mozzarella ball
Repeat.
